FOR SOME UNKNOWN REASON I'M COMPLETELY OBSESSED WITH THIS DEEP, JUICY, ORANGE AT THE MINUTE. IT RULES MY WORLD. THIS IS A RING ONE OF MY FRIENDS GAVE TO ME FOR MY BIRTHDAY, SHE KNOWS I LOVE VINTAGE, WHAT SHE DIDN'T KNOW, IS THIS IS EXACTLY WHAT I HAVE BEEN LOOKING FOR! WELL DONE TO HER!
THIS IS THE LASAGNE I MADE TODAY. I'M A VEGETARIAN, SO IT'S PROBABLY NOT THE WAY MOST WOULD HAVE THEIR LASAGNES, BUT HERE'S THE INGREDIENTS + THE METHOD ANYWAY. .5 SPRING ONIONS
.1 OR 2 NORMAL WHITE ONIONS
.A COUPLE OF LEEKS
.4 GARLIC GLOVES
.FOUR OR FIVE GOOD HANDFULS OF FRESH SPINACH
.ONE TIN OF CHOPPED TOMATOES
.SOME DRIED NUTMEG
.ABOUT 6 OR 7 MUSHROOMS
. SOME DRIED OREGANO
.MOZZARELLA
.SOME OTHER CHEESE PERHAPS - I JUST USED CHEDDER.
PARMESAN WOULD BE BETTER
FIRSTLY, I CHOPPED THE SPRING ONIONS, WHITE ONIONS, GARLIC + MUSHROOMS. FRIED THEM ALL TOGETHER IN OLIVE OIL AND A SMALL SCOOP OF BUTTER FOR ABOUT 3 MINUTES. IT'S IMPORTANT NOT TO LET THE GARLIC BURN! I THEN ADDED THE SPINACH TO THE PAN FOR A COUPLE OF MINUTES.
ONCE READY, I PUT THE CHOPPED TOMATOES TO BOIL, THEN ADDED THE FRIED VEGETABLES. WHILST IT WAS HEATING, I CHOPPED THE LEEKS, HEATED THE KETTLE, + LEFT THEM TO BOIL FOR FIVE OR SO MINUTES TO ACHIEVE A SOFT TEXTURE. ONCE READY, I DRAINED THE LEEKS AND ADDED THEM WITH THE REST.
I THEN ADDED SOME DRIED HERBS - MIXED ITALIAN, NUTMEG, OREGANO, AND A FEW PINCHES OF SALT. TO GIVE IT AS MUCH FLAVOR.
I THEN PRE-HEATED THE OVEN TO 200 DEGREES, FINALLY I EMPTIED THE CONTENTS OF THE PAN INTO A BAKING TRAY AND LAYERED WITH LASAGNE SHEETS WHICH I THEN COVERED WITH MOZZARELLA + A BIT OF CHEDDAR CHEESE.
I LEFT IT IN THE OVEN FOR ABOUT 40 MINUTES + WALA - BONAPPETIT!
